Hello. My name is Taizo Otsuki.
I run a soba noodle making class "TSUKUSHI"  in Osaka, Japan.

TSUKUSHI is a soba noodle making class that is just one stop away from Osaka station.
(Osaka station is the biggest station in the western Japan.)

TSUKUSHI opened in July 2023, inheriting the spirit of "Temma Tsukushi", a famous soba restaurant that was once located in this area.

From beginners to advanced people, you can enjoy making soba in a casual atmosphere. 

What we value is "Making Delicious Memories".

Beginner-Friendly Lessons

At TSUKUSHI, we are committed to providing lessons that ensure everyone can create 'Delicious Memories'.
We focus on key points to guarantee that even first-timers can successfully make soba noodles.
After making your noodles, you'll get to enjoy the taste of freshly cooked noodles right on the spot.
90% of our visitors are beginners, so please join us with confidence.

The Owner: Taizou Otsuki

Taizo Otsuki, the owner, is the biggest soba lover in Osaka.
His passion for eating soba led him to pursue making it himself, and he apprenticed at the historic "Temma Tsukushi" soba restaurant in Osaka under the mentorship of Hajime Ishikawa.

After the passing of his mentor, Taizo took up the dying wish of his mentor and opened 'TSUKUSHI' at the same location.
With the concept of 'Casually Enjoying Soba-Making,' he aims to create a welcoming space where even beginners can discover the charm of soba.

He cherishes his mentor's words: 'It may be just Soba, yet it's so much more.'

Services

Making Soba Noodles Lesson at TSUKUSHI

We will be holding a class at the "TSUKUSHI" store in Temma, Osaka (reservation required).

Making Soba Events

We occasionally hold events where you can experience making soba noodles.

Visiting class

The store owner (Otsuki) will visit the customer who requested it and hold a lesson.

Process of Making Soba

We would like to introduce an example of a person who experienced soba making for the first time.

STEP

Sift the buckwheat flour

Sift the buckwheat flour to remove lumps and impurities. This will make the dough smooth and give you buckwheat noodles with a uniform texture.

STEP

Mix buckwheat flour

Add the appropriate amount of water to the buckwheat flour little by little and mix the dough with your hands. Mix carefully so that the water and flour are evenly distributed.

Knead soba dough

Knead the mixed dough with your hands and form it into a ball. Kneading makes the dough smoother and easier to handle.

Stretch the dough

Place the dough on a work surface and use a stick to roll it out into a thin layer. Carefully roll out the dough to make it evenly thick so it doesn't tear.

Fold the dough

Fold the stretched dough to the appropriate width to cut it into wide soba noodles. Be careful to line up the folds neatly.

Cut the dough

Use a knife to cut the folded dough. Make sure that the cuts are even and that the width of the soba noodles is even.

Tasting Time

There is also time to actually taste freshly made soba. Enjoy the soba noodles you make yourself at the most delicious moment.

One drink included

During the tasting time, in addition to soft drinks, we also offer beer, highballs, cold sake, and other alcoholic drinks that go well with soba. One drink is included in the price. Please enjoy a fun time with your friends and family.

Lesson at TSUKUSHI


It was fun! I'm not good at cooking, but I think making soba noodles is more of a technique than cooking. The soba I made myself was very delicious. I think it would be so wonderful to be able to spend New Year's Eve by your side at the end of every year*. thank you very much.

*In Japan, there is a custom of eating soba on New Year's Eve. Eating long noodles has the meaning of wishing for good health and longevity.

It was my first experience making soba, but I was able to enjoy making soba thanks to the detailed instructions. It was difficult to cut the last soba at the same intervals, but when I actually tried it, the soba I made myself was extremely delicious even though the thickness was different!

  • 3 minutes walk (about 300m) from JR Temma Station
  • It is a 5-minute walk (about 400m) from Ogimachi Station (Osaka Metro Sakaisuji Line).

There is no parking lot at our store. Please use the nearby coin parking lot.
